Fruit Salad In A Light Sauce
Need a breakfast change? This is it!
A wonderful array of seasonal fruit with a mild nutty flavor.
        Ingredients

2 red delicious apples, diced in small
pieces
2 yellow apples, diced in small pieces
2 Macintosh apples, diced in small
pieces
1 Granny Smith apple, diced in small
pieces
2 ripened Bartlett pears, diced in
small pieces
1 ripened large mango, finely
chopped or the juice of one orange*
½ cup of raisins (white is possible)
1 or 2 Tbsp almond, cashew or
peanut butter (to taste)
1 large ripe banana, sliced
Optional:  ¼ cup walnuts, chopped

*Mango is citrus and will prevent
banana and apples from browning.
      Instructions

In a large bowl, mix apples and pears.
Add mango and raisins. Mix well. Add
walnuts and almond butter. Add
banana, making sure that there is
enough juice from the mango or
orange juice to whiten the apples and
banana. If not, add more to taste.  Mix
well. Chill for 1 hour. Serve on a bed
of lettuce.

Raisins and bananas may be added
just before serving.
